Beetroot & Mango Salad

Start with a base of fresh salad – Lettuce, Rocket, Spinach

Add 1/2 a ripe, juicy, Mango

Chop 3 small Beetroots and add

Boil Green Beans, leave to cool, chop up & add!

Toast Pine nuts on a low heat for 5 minutes, tossing regularly!

Top with:

Salad dressing

– 1/3 a cup of Olive Oil

– 1 tablespoon of White Wine Vinegar

– 1 tablespoon of Dijon Mustard

– 1/2 tablespoon of Honey or Agave

– Pepper & Salt
